Summersalads: Greek Feta

Nothing spells ‘healthy’ better than a salad! So, if the salad can be made into a wholesome fun meal,what more can we really ask for. Today, I’m thinking, beautiful sunny day, too warm to either eat or cook a heavy multi ingredient meal, so, the easy solutionis: a summer salad, infused with the freshness of cucumbers, the spice of redonions, the relaxing flavours of black olives and the zing of feta cheese. A perfect toss of this and that, just enough ofeverything to keep the summer joy going and yet maintaining healthiness and,freshness, required to keep me awake through a hot summer day.
TheRecipe:
Time: 10 minutes
Serves: 4
Ingredients

Tomato: 3 large, diced

Cucumber: 2 medium sized,peeled, diced

Red onion: One small diced

Olive oil: +1/4 cup

Fresh Lemon juice : 2 Tbsp

Dried oregano: 1 Tsp

Salt: As per taste

Feta cheese: 1 cup crumbled

Olives: 6 black, pitted andsliced
Directions:

In a bowl, mix the tomatoes,cucumber, and onion

Pour in the oil, oregano, lemonjuice and salt and pepper

Sprinkle feta cheese and olives

Your salad is ready to eat! Youcould keep it in the fridge for 10 minutes, in which case, please make sure toadd the salt after you take it out else, it will leave water from thevegetables.
